Novia Scotia Seafood Chowder
  • 1 cup Whole Milk, 1 cup of heavy cream
  • 1 lb. white fish (haddock, cod, halibut)
  • 2 large russet potatoes cubed
  • 2 cloves of minced fresh garlic
  • 1 medium onion finely chopped or you can use shallots if you prefer
  • 1 lb. Scallops
  • 1 lb. shrimp or lobster cut into pieces
  • 1 cup of white wine
  • 4 cups of seafood or chicken stock
  • 2 sprigs of thyme and 2 bay leaves
In a large stock pot melt 2 tablespoons of butter over medium heat, then add onions and garlic. Sauté for 4-5 minutes until the onions are translucent. Stir in potatoes, cooking for approximately 5-7 minutes until they start to soften. Pour in stock, raising the heat to bring the mixture to a gentle boil. Cook uncovered for 10-12 minutes until potatoes are fork tender. Lower the heat and add the heavy cream and whole milk. Stir gently until smooth and heated through but not boiling. Carefully add the fish, scallops, shrimp and or lobster to the pot. Cook another 5-7 minutes until seafood is fully cooked. Stir in fresh thyme and bay leaves along with salt and pepper to taste. Heat through for 2-3 minutes more. Serve with a crusty bread and a salad to round out the meal. You can also sprinkle on some parmesan cheese and toasted panko breadcrumbs when serving.
